Hotel Revival's Executive Chef Wilbur Cox's strong passion for food and service began early. At five, Executive Chef Wilbur Cox discovered the joy of fresh foods while on his family’s farm in rural North Carolina. Cox, a culinary powerhouse, started from humble beginnings as a dishwasher at his family’s restaurant at the age of 13. As his career progressed, he began working alongside some of the finest chefs in the industry, including E. Michael Reidt, Patricia Yeo, and Guillermo Tellez-Cruz. Each adventure inspired new techniques that are the moving force behind Baltimore’s most renowned restaurants including Ixia, The Bicycle, Charleston Restaurant, The Wine Market and B+O American Brasserie.
As an amateur forager, Cox focuses on local and sustainable ingredients that are good for the mind, body and soul. Cox’s natural talent for blending innovative flavors with unconventional practices makes Hotel Revival’s culinary experience full and flavorful. When he’s not in the kitchen, you can find him at the local market hand-picking fresh ingredients, restoring antique furniture or spending playful days with his Chesapeake Bay retriever pup, Bruno.
