On the grounds of tranquil Flying Pigs Farm in upstate New York live 1000 rare-breed heritage hogs. These animals are the inspiration behind the eighth annual Pig Island, an all-you-can-eat waterfront shindig in Brooklyn’s Red Hook neighborhood on September 9. Over 25 chefs and pitmasters like Bill Telepan of Oceana, Tyson Ho of Arrogant Swine, and Bill Fletcher of Fletcher’s Brooklyn Barbecue will serve up creative porcine specialties—in years past pig head tacos and glazed pork belly and peach ramen were on offer—from these local pigs. Naturally, you’ll want to wash it all down with New York State craft beer, cider, or brown spirits from the whiskey tent.
